Delight Kids with Simple St. Patrick’s Day “Green” Pancakes!

St. Patrick’s Day is coming up! Kids love St. Patrick’s Day — as do parents — because it’s easy to make it festive and fun. I mean, you can kind of add green to anything and make it more exciting, amiright? And food is one of the easiest ways to do this. Add some green and — BAM! — it becomes St. Patrick’s Day food.

So I wanted to share something with you that would make a fun, simple breakfast on St. Patrick’s Day. This recipe is quick and easy to make (just 3 ingredients!) and a hit with kids — even picky eaters. Do I have your attention yet? 

Easy St. Patrick’s Day Food Recipe

St. Patrick’s Day “Green” Pancakes

Yield: Makes about 14 pancakes

Prep/Cook Time: about 10-15 minutes

Calorie Content: approximately 85 calories per pancake

Ingredients:

  • 2 Cups Bisquick
  • 1 Cup Naked Juice “Green Machine”
  • 2 Eggs
  • (Optional) Green Food Coloring

That’s right — this recipe is straight from the Bisquick box with one notable exception: The milk is swapped for Naked Juice! I used the “Green Machine” flavor, which I love. It has apple juice, bananas, kiwi, spinach, kale, and lots more healthy ingredients. It’s one of my favorite go-to’s when I’m feeling a lack in fruits and vegetables.

(This is not an ad for Naked Juice or Bisquick — I just truly love their products for busy families. I bought these ingredients myself and love how they make my life healthier and easier.)

Here’s the thing: Swapping the milk for Green Machine juice gives the pancakes a slight green hue but definitely increases the nutrients found in this breakfast.

I opted to leave out the green food coloring for the benefit of my picky eater. If you have a picky eater in your house, too, they probably won’t notice the change in pancakes much. They’re not really that green once you cook them up… but you and I both know they’ve got a lot more vitamins and minerals than your average pancakes. Wink.

For reference, here’s what they look like without a fancy green St. Patrick’s Day filter on them.

And if you’re looking for something really green for your St. Patrick’s Day food, then I’d recommend you add some extra green food coloring to your batter. It’ll give it the festive POP you’re looking for if you’re blessed with non-picky eaters in your household! Haha.

How to Make the St. Patrick’s Day Pancakes

Simply stir the ingredients together and pour just under 1/4 cup onto your pre-warmed, greased skillet or griddle to make each pancake. Your pancake is ready to flip when the top of the pancake is sort of bubbly, and you can get your spatula under without the edges running over. Flip the pancake and cook on the other side until it’s kind of a golden green hue.

Feel free to add 1 cup of blueberries or 1/2 cup chocolate chips — whatever your family likes! (Just keep in mind that will increase the calorie content noted above.) Top with a little butter and syrup or honey, and serve your family their easy-to-make, delicious-to-eat, St. Patrick’s Day breakfast.

In my house, these pancakes were chosen over donuts — which is saying a LOT! I hope you have as much success with them as I did.
